Full Suspension Funeral Potatoes


3 tbsp butter
1 medium onion, diced
3 tbsp all-purpose flour
12 oz Full Suspension Pale Ale
1.5 cups whole milk
Kosher salt and freshly ground black pepper
2 cups Beehive Promontory Cheese, shredded
1 cup sour cream
2 lbs frozen hash browns, thawed
2 cups potato chips, crushed
Chives, to garnish

1. Heat oven to 350° F. Melt butter in a large saucepan over medium heat. Add onion and cook until soft, about 5 minutes. Whisk in flour until no raw flour remains. Whisk in Full Suspension Pale Ale and milk, and simmer for 5 minutes. Remove from heat, season with salt and pepper and stir in cheese.

2. Pour cheese sauce into a large casserole dish. Stir in sour cream. Add hash browns and mix well to combine. Top with potato chips and cover with foil. Bake for 40 minutes.

3. Garnish with chives and serve warm.
