2 lbs chicken wings, tips removed, drumettes and flats separated
1 can Florida Man Double IPA
2 tbsp kosher salt
2 tbsp sugar
2 garlic cloves, peeled and minced
1 1/2 cups water
1 bay leaf
1 orange, peeled and sliced 1/4-inch thick
1/2 cup all purpose flour
2 eggs, beaten
4 cups BBQ potato chips, crushed
3 green onions, sliced
Ranch dressing, for dipping
Whisk together salt, sugar, garlic, and Florida Man Double IPA in a large mixing bowl until salt and sugar are dissolved. Add water, bay leaf, orange slices and chicken wings. If necessary, add water until all the wings are submerged. Cover and refrigerate for 10-12 hours, up to 24 hours.
Heat oven to 425° F. Remove wings from brine and pat dry with paper towels.
Place flour in a shallow bowl. Whisk eggs in another shallow bowl. Place crushed chips in a 3rd shallow bowl. Dredge chicken in flour, egg, then chips, shaking off excess. Arrange on a parchment-lined baking sheet.
Bake for 40-45 minutes, rotating once, until chicken is golden brown and cooked through. Serve topped with green onions and ranch dipping sauce.
