3 tbsp neutral cooking oil, like canola or safflower
1 lb breakfast sausage, casing removed
1 onion, chopped
1 red bell pepper, chopped
1 sweet potato, peeled and chopped into 1-inch pieces
1 russet potato, chopped into 1-inch pieces
1 tbsp rosemary, minced
1/4 cup Evolution Amber Ale
1 tbsp chives, chopped
Heat 1 tbsp oil in a large oven-safe skillet over medium-high heat. Add sausage and cook until brown. Remove sausage and reserve.
Add 1 tbsp oil, onions, and peppers, and saute until onions are translucent. Transfer to bowl with sausage.
Add remaining oil, sweet potatoes and potatoes. Season with salt and pepper to taste and sprinkle with rosemary. Lower heat to medium, cover and cook for 15 minutes. Add sausage, onions and peppers. Pour Evolution Amber Ale over top, cover, and cook until potatoes are fork tender.
Crack eggs over hash. Season each egg with salt and pepper, place skillet in oven and cook for 10-15 minutes, until eggs are set. Sprinkle chives over hash and serve.
