Three Weavers’ Seafarer Fire-Roasted Salsa


1½ lbs Roma tomatoes
3 serrano chiles
2 cloves of garlic, peeled
½ cup white onion, chopped
1 cup cilantro, chopped
¼ cup Seafarer Kolsch
Juice of ½ lime
1 tsp honey
Kosher salt and freshly ground black pepper, to taste

  1. Heat a grill over medium-high heat. Add whole tomatoes and chiles. Grill, turning occasionally, until softened and charred. Remove from heat and let cool.
  2. Stem and roughly chop chiles. Add with tomatoes to a food processor or blender. Add garlic, salt and pepper and blend until fairly smooth. Add onions and cilantro. Pulse a few times.
  3. Pour into bowl. Stir in Seafarer Kolsch, lime juice and honey. Season to taste. Let sit for 30 minutes to allow flavors to come together. If the salsa is still too chunky, stir in a little more beer.

*Optional: Add salsa to grilled avocados and sprinkle with feta cheese. To grill avocados, heat a grill over medium-high heat. Slice avocados in half and remove pit. Brush avocados with some cooking oil and season. Grill cut side down for 3-4 minutes.
